Not all Iberian hams are equal
Do you know the ranges within the Iberian ham?
There are three types.
First you will find ham bait, which has 24 months of healing and is a pig fattened with grain, with a father who can be white pig, usually Duroc.
The second category is that of Iberian ham, aged between 36 and 48 months of treatment and with 75 percent of its Iberian genes.
Finally, the best of all is pure ham or Iberian hundred percent, better known as pata negra ham, which has all the qualities of the best ham: 100 percent Iberian pigs reared in total freedom and fed on acorns.
